This years conference kicked off with a demonstration from Bruce Sangster who, this year gained a Michelin Star for his Restaurant "Sangsters" in Elie and was also awarded "Chef of the year 2009" at the CIS Awards.
We are also pleased to announce that last years demonstrator for Rougié, Head Chef Mickael Weiss of Coq d'Argent has won this years Skills for Chefs annual competition on the 16th July, to be crowned the Restaurant Chef of the Year 2009.
Chefs had one hour to cook a two course meal from a mystery basket and in that time Mickael cooked a staggering feast: smoked pork fillet wrapped in Parma ham accompanied by sweet potato purée and Royale , leeks and thyme. For dessert , Mickael cooked not one but three desserts in his Berry Trio: gooseberry fool , strawberry cheesecake sablée and blackberry dark chocolate sabayon tart.
This years Conference was opened by the General Manager of the Thisle Hotel Glasgow.
